Chef's Note
For the best texture and flavor contrast, use thick Greek yogurt with at least 2% fat content. The lemon zest and orange blossom water add subtle aromatic notes that elevate this simple breakfast. If preparing ahead, keep the granola separate and add just before serving to maintain its crunch.

Ingredients
3 cups plain Greek yogurt
1/4 cup honey
1 teaspoon vanilla extract
1 teaspoon lemon zest
1 cup fresh strawberries, hulled and sliced
1 cup fresh blueberries
1 cup fresh raspberries
1 cup granola
1/4 cup sliced almonds
2 tablespoons chia seeds
8 leaves fresh mint leaves
1/2 teaspoon orange blossom water (optional)
Instructions
- 1
In a medium bowl, whisk together 3 cups of Greek yogurt, 3 tablespoons of honey, 1 teaspoon of vanilla extract, 1 teaspoon of lemon zest, and 1/2 teaspoon of orange blossom water (if using) until well combined. Set aside.
- 2
In a small saucepan over low heat, warm 2 tablespoons of honey for about 2 minutes until it becomes more fluid and easier to drizzle.
- 3
In a separate bowl, gently toss the berries together with 1 tablespoon of honey. Let them macerate for 5 minutes to release their natural juices.
- 4
Toast 1/4 cup of sliced almonds in a dry skillet over medium heat for about 3 minutes, stirring frequently until golden and fragrant. Remove from heat and let cool.
- 5
In four clear serving glasses or bowls, begin layering the parfait by adding 2 tablespoons of granola to the bottom of each container.
- 6
Add a layer of the honey-yogurt mixture (about 1/4 cup) on top of the granola in each glass.
- 7
Add a layer of the mixed berries (about 2-3 tablespoons) on top of the yogurt layer.
- 8
Sprinkle 1/2 teaspoon of chia seeds over the berries in each glass.
- 9
Repeat the layering process once more: granola, yogurt, berries, and chia seeds.
- 10
Top each parfait with a final layer of yogurt (about 1/4 cup).
- 11
Garnish each parfait with the remaining berries, toasted almonds, a drizzle of the warmed honey, and a mint leaf.
- 12
Refrigerate for at least 10 minutes before serving to allow flavors to meld and chia seeds to slightly expand.
