  • 1 medium carrot

  • 1/2 medium cucumber

  • 1 stalk celery

  • 1/2 medium bell pepper (any color)

    Cut 1 medium red bell pepper in half, remove seeds and stem, and place cut-side down on a baking sheet lined with parchment paper.

    Roast the red pepper for 15 minutes until the skin is charred and blistered.

    Remove the pepper from the oven and immediately place in a small bowl. Cover with plastic wrap and let steam for 5 minutes (this makes the skin easier to remove).

    While the pepper is cooling, drain and rinse 1/2 cup of chickpeas, reserving 2 tablespoons of the liquid from the can.
