2 cups Greek yogurt (full-fat)
1/2 cup raw mixed nuts (almonds, walnuts, pecans)
3 tablespoons honey, divided
1/2 teaspoon cinnamon
1/8 teaspoon sea salt
1 cup fresh berries (strawberries, blueberries, raspberries)
1 medium banana
1/2 teaspoon vanilla extract
1/2 teaspoon lemon zest
1/4 cup granola

Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper.

In a small bowl, mix 1 tablespoon of honey with the cinnamon and sea salt.

Roughly chop the mixed nuts and toss them in the honey-cinnamon mixture until evenly coated.

Spread the coated nuts in a single layer on the prepared baking sheet and roast for 12-15 minutes, stirring once halfway through, until golden and fragrant. Remove from oven and let cool completely.

While the nuts are roasting, wash and prepare the fruit. Hull and slice the strawberries, wash the blueberries and raspberries, and slice the banana.

In a medium bowl, combine the Greek yogurt with the vanilla extract, remaining 2 tablespoons of honey, and lemon zest. Whisk until smooth and well combined.

To assemble the parfaits, use two clear glasses or bowls. Start with a layer of the honey-vanilla yogurt (about 1/4 cup per glass).

Add a layer of mixed berries and banana slices, followed by a sprinkle of honey-roasted nuts and a small amount of granola.

Repeat the layers, finishing with a dollop of yogurt on top, garnished with a few berries, nuts, and a light drizzle of honey.
