Chef's Note
For the creamiest texture, use very ripe bananas with brown spots. You can prepare these oats up to 3 days in advance for quick grab-and-go breakfasts throughout the week. For extra flavor layering, try toasting the oats in a dry skillet for 5 minutes before mixing with the other ingredients.

Ingredients
2 cups rolled oats
2 tablespoons chia seeds
2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
2 medium ripe bananas
2 cups low-fat milk
1 cup non-fat Greek yogurt
2 tablespoons honey
1 teaspoon vanilla extract
1/4 cup sliced almonds
1 cup fresh berries
Instructions
- 1
In a large mixing bowl, combine 2 cups of rolled oats, 2 tablespoons of chia seeds, 2 teaspoons of ground cinnamon, 1/4 teaspoon of ground nutmeg, and 1/4 teaspoon of salt. Mix well to ensure the spices are evenly distributed.
- 2
In a separate bowl, mash 2 medium ripe bananas with a fork until smooth with some small chunks remaining for texture.
- 3
Add 2 cups of low-fat milk, 1 cup of non-fat Greek yogurt, 2 tablespoons of honey, and 1 teaspoon of vanilla extract to the mashed bananas. Whisk until well combined.
- 4
Pour the wet banana mixture into the oat mixture and stir until thoroughly combined.
- 5
Divide the mixture evenly among 4 mason jars or airtight containers.
- 6
Seal the containers and refrigerate overnight or for at least 6 hours to allow the oats to soften and the flavors to meld together.
- 7
Before serving, top each jar with 1 tablespoon of sliced almonds and 1/4 cup of fresh berries of your choice.
- 8
Enjoy cold straight from the refrigerator, or allow to sit at room temperature for 10 minutes if preferred less chilled.
