Chef's Note
For the best texture contrast, assemble these parfaits just before serving. If you need to prepare ahead, keep the granola separate and add it just before serving to maintain its crunch. You can also try freezing the berries for 15 minutes before assembly for an extra refreshing treat on warm days.

Ingredients
2 cups Greek yogurt
4 tablespoons honey
1 teaspoon vanilla extract
1 cup fresh strawberries
1 cup fresh blueberries
1 cup fresh raspberries
1 cup granola (nut-free)
1 teaspoon lemon zest
1/2 teaspoon cinnamon
1/4 cup toasted sliced almonds
Instructions
- 1
In a medium bowl, mix 2 cups of Greek yogurt with 2 tablespoons of honey, 1 teaspoon of vanilla extract, and 1/2 teaspoon of cinnamon until well combined.
- 2
Wash all berries thoroughly and pat dry with paper towels.
- 3
Hull and slice 1 cup of strawberries into thin pieces.
- 4
In a small bowl, gently toss the mixed berries with 1 teaspoon of lemon zest and 1 tablespoon of honey to enhance their natural flavors.
- 5
Toast 1/4 cup of sliced almonds in a dry skillet over medium heat for 3-4 minutes until lightly golden, stirring frequently to prevent burning.
- 6
In 4 serving glasses or bowls, begin layering by placing 2 tablespoons of granola at the bottom of each container.
- 7
Add a layer of the honey-cinnamon yogurt mixture (about 1/4 cup) on top of the granola in each container.
- 8
Add a layer of mixed berries (about 3 tablespoons) on top of the yogurt layer.
- 9
Repeat the layers once more: granola, yogurt, and berries.
- 10
Top each parfait with a final dollop of yogurt, a sprinkle of remaining granola, some toasted almonds, and a drizzle of the remaining 1 tablespoon of honey.
- 11
Serve immediately or cover and refrigerate for up to 2 hours before serving (note that the granola will soften if stored too long).
