Chef's Note
For the best results, use day-old bread as it absorbs the custard mixture better without becoming soggy. Brioche, challah, or sourdough work wonderfully for this recipe. If you prefer a dairy-free version, almond milk makes an excellent substitute for regular milk.

Ingredients
8 slices thick-cut bread
4 large eggs
1 cup milk
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
1/4 cup maple syrup
3 tablespoons butter
3 medium ripe bananas
2 tablespoons brown sugar
1/4 cup additional maple syrup
2 tablespoons powdered sugar
Instructions
- 1
In a large shallow bowl, whisk together 4 large eggs, 1 cup milk, 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon, 1/4 teaspoon nutmeg, 1/4 teaspoon salt, and 1/4 cup maple syrup until well combined.
- 2
Heat a large non-stick skillet or griddle over medium heat and melt 1 tablespoon of butter.
- 3
Dip each slice of bread into the egg mixture, allowing it to soak for about 30 seconds on each side.
- 4
Place the soaked bread on the heated skillet and cook for 2-3 minutes on each side until golden brown. Work in batches, adding more butter as needed.
- 5
Transfer the cooked French toast to a warm oven (200°F) to keep warm while preparing the remaining slices.
- 6
For the caramelized bananas, melt 2 tablespoons of butter in a separate skillet over medium heat.
- 7
Add 2 tablespoons brown sugar to the melted butter and stir until dissolved.
- 8
Slice 3 medium bananas into 1/2-inch thick rounds and add them to the skillet.
- 9
Cook the bananas for 2-3 minutes, gently turning once, until they become golden and caramelized.
- 10
Serve the French toast topped with caramelized bananas, a drizzle of additional maple syrup, and a light dusting of powdered sugar.

Tasty but I wouldn't make it again. None of the flavours really stood out. My son loved it!
