Chef's Note
For the best flavor, choose firm, tart apples like Granny Smith or Honeycrisp. The protein powder adds a significant protein boost to this otherwise carb-heavy snack, creating a balanced treat that will keep you satisfied. You can prepare the filling in advance to save time.

Ingredients
2 whole large apples
2 tablespoons natural almond butter
4 tablespoons vanilla protein powder
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg
2 teaspoons honey
1/2 cup Greek yogurt
2 tablespoons chopped almonds
2 tablespoons water
Instructions
- 1
Preheat the oven to 375°F (190°C).
- 2
Wash 2 large apples thoroughly and pat dry with a paper towel.
- 3
Using a sharp knife, carefully core the apples, leaving the bottom intact to create a bowl-like shape. Remove seeds and tough parts but keep the apple whole.
- 4
Place the cored apples in a small baking dish.
- 5
In a small bowl, mix 2 tablespoons of natural almond butter, 4 tablespoons of vanilla protein powder, 1 teaspoon of ground cinnamon, 1/4 teaspoon of nutmeg, and 2 teaspoons of honey. Add 2 tablespoons of water to help create a paste-like consistency.
- 6
Spoon the almond butter mixture evenly into the cored apples, pressing down gently.
- 7
Pour about 1/4 inch of water into the bottom of the baking dish to prevent the apples from drying out.
- 8
Cover the dish with aluminum foil and bake for 15 minutes. Then remove the foil and bake for an additional 5 minutes until the apples are tender but still hold their shape.
- 9
While the apples are baking, mix 1/2 cup of Greek yogurt with a sprinkle of cinnamon for serving.
- 10
Remove the apples from the oven and let cool for 5 minutes.
- 11
Serve each apple with a dollop of the prepared Greek yogurt and sprinkle with 1 tablespoon of chopped almonds per serving.
