Chef's Note
For maximum freshness, store this trail mix in the refrigerator for up to two weeks. The protein coating on the nuts creates a delicious crunchy texture while boosting the protein content. You can customize this mix with different nuts or dried fruits, but be mindful that substitutions will affect the macronutrient profile. For best results, use unsweetened dried fruits and sugar-free jerky to keep carbs in check.

Ingredients
1 cup raw almonds
1/2 cup raw walnuts
1/2 cup raw pumpkin seeds
1/2 cup whey protein isolate powder (unflavored)
2 large egg whites
2 tablespoons coconut oil
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/4 teaspoon sea salt
1/4 cup dried blueberries (unsweetened)
1/4 cup dried tart cherries (unsweetened)
4 ounces beef jerky (no added sugar)
1/4 cup dark chocolate chips (70% cacao or higher)
2 tablespoons monk fruit sweetener
Instructions
- 1
Preheat your oven to 300°F (150°C) and line a large baking sheet with parchment paper.
- 2
In a large bowl, combine 1 cup raw almonds, 1/2 cup raw walnuts, and 1/2 cup raw pumpkin seeds.
- 3
In a separate small bowl, whisk together 2 large egg whites until frothy (about 1 minute).
- 4
Add 2 tablespoons melted coconut oil, 1 teaspoon vanilla extract, 1 teaspoon cinnamon, 1/4 teaspoon sea salt, and 2 tablespoons monk fruit sweetener to the egg whites. Whisk until well combined.
- 5
Pour the egg white mixture over the nuts and seeds. Stir well to ensure all nuts and seeds are evenly coated.
- 6
Sprinkle 1/2 cup unflavored whey protein isolate over the coated nuts and seeds. Fold gently until everything is evenly coated with the protein powder.
- 7
Spread the mixture in a single layer on the prepared baking sheet.
- 8
Bake for 30 minutes, stirring every 10 minutes to ensure even toasting. The nuts should be golden and fragrant when done.
- 9
Remove from the oven and let cool completely on the baking sheet (about 15 minutes).
- 10
While the nut mixture is cooling, chop 4 ounces of beef jerky into small, bite-sized pieces.
- 11
Once the nut mixture is completely cool, transfer to a large bowl and add 1/4 cup dried blueberries, 1/4 cup dried tart cherries, the chopped beef jerky, and 1/4 cup dark chocolate chips.
- 12
Gently toss all ingredients until well mixed.
- 13
Divide the trail mix into 4 equal portions (about 1 cup each) and store in airtight containers.
