Chef's Note

For the juiciest sliders, avoid pressing down on the patties while cooking. The dimple technique prevents the burgers from puffing up in the middle. If you're short on time, the caramelized onions can be made a day ahead and refrigerated, then gently reheated before serving.

Ingredients
  • 1 pound ground beef (80/20)

  • 2 medium yellow onions

  • 2 tablespoons unsalted butter

  • 1 teaspoon brown sugar

  • 1 tablespoon balsamic vinegar

  • 1/2 cup mayonnaise

  • 2 cloves fresh garlic

  • 1 tablespoon fresh chives

  • 1 tablespoon fresh parsley

  • 1 teaspoon fresh tarragon

  • 1 teaspoon lemon juice

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon Dijon mustard

  • 12 small brioche slider buns

  • 1 teaspoon kosher salt

  • 1/2 teaspoon black pepper

  • 1 tablespoon olive oil

  • 2 cups arugula

  • 6 ounces aged cheddar cheese

Instructions
  • 1

Begin by preparing the caramelized onions. Slice 2 medium yellow onions thinly. Heat a large skillet over medium-low heat and add 2 tablespoons of unsalted butter.

  • 2

Add the sliced onions to the skillet with a pinch of salt. Cook slowly, stirring occasionally, for about 25 minutes until they become golden brown and very soft.

  • 3

Add 1 teaspoon of brown sugar and 1 tablespoon of balsamic vinegar to the onions. Continue cooking for another 5 minutes until the liquid has reduced and the onions are deeply caramelized. Remove from heat and set aside.

  • 4

While the onions are caramelizing, prepare the herb aioli. In a small bowl, combine 1/2 cup of mayonnaise, 2 minced garlic cloves, 1 tablespoon of chopped chives, 1 tablespoon of chopped parsley, 1 teaspoon of chopped tarragon, and 1 teaspoon of lemon juice. Mix well and refrigerate until ready to use.

  • 5

In a large bowl, gently mix 1 pound of ground beef with 1 tablespoon of Worcestershire sauce, 1 teaspoon of Dijon mustard, 3/4 teaspoon of kosher salt, and 1/2 teaspoon of black pepper. Be careful not to overmix, which can make the patties tough.

  • 6

Divide the beef mixture into 12 equal portions (about 1.3 ounces each) and form into small patties slightly larger than the slider buns, as they will shrink when cooking. Press a small dimple in the center of each patty with your thumb to prevent them from puffing up during cooking.

  • 7

Heat 1 tablespoon of olive oil in a large skillet or grill pan over medium-high heat. Cook the sliders for about 2 minutes per side for medium-rare, or adjust to your preferred doneness.

  • 8

During the last minute of cooking, top each slider with a small slice of aged cheddar cheese and cover the pan to help the cheese melt.

  • 9

Meanwhile, lightly toast the brioche slider buns until golden brown.

  • 10

To assemble the sliders, spread herb aioli on both halves of each bun. Place a few arugula leaves on the bottom bun, followed by a beef patty with melted cheese, and a generous spoonful of caramelized onions. Top with the other half of the bun.

  • 11

Serve immediately, with any remaining herb aioli on the side for dipping.
