For perfectly centered egg yolks, lay the eggs on their sides in the refrigerator for 24 hours before cooking. The ice bath is crucial for easy peeling - don't skip it! You can make the everything bagel seasoning in bulk and store it in an airtight container for future use.

16 whole large eggs
2 medium avocado
4 oz cream cheese
2 tbsp sesame seeds
2 tbsp poppy seeds
1 tbsp dried minced garlic
1 tbsp dried minced onion
1 tbsp flaky sea salt
16 crackers whole grain crackers
16 whole cherry tomatoes
1 medium cucumber
2 tbsp fresh dill
1 tbsp lemon juice
1 tsp black pepper

Place 16 large eggs in a large pot and cover with cold water by 1 inch. Bring water to a rolling boil over high heat.

Once boiling, remove the pot from heat, cover with a lid, and let the eggs sit in the hot water for 12 minutes.

While eggs are cooking, prepare an ice bath in a large bowl with cold water and ice cubes.

After 12 minutes, transfer the eggs to the ice bath using a slotted spoon and let cool for 5 minutes.

In a small bowl, mix together 2 tbsp sesame seeds, 2 tbsp poppy seeds, 1 tbsp dried minced garlic, 1 tbsp dried minced onion, and 1 tbsp flaky sea salt to create the everything bagel seasoning.

Peel the cooled eggs and slice them in half lengthwise.

In a medium bowl, mash 2 medium avocados with 1 tbsp lemon juice, 4 oz cream cheese, and 1 tsp black pepper until well combined but still slightly chunky.

Slice 1 medium cucumber into thin rounds and halve 16 cherry tomatoes.

To assemble: spread the avocado-cream cheese mixture onto 16 whole grain crackers, top each with a halved egg, and sprinkle generously with the everything bagel seasoning.
