Toast 1/4 cup of chopped almonds and 1/4 cup of unsweetened shredded coconut in a dry skillet over medium heat for about 3-5 minutes until lightly golden and fragrant. Stir frequently to prevent burning. Set aside to cool.

In a small saucepan, melt 1/4 cup of coconut oil over low heat. Add 1/2 cup of almond butter and 3 tablespoons of honey, stirring until smooth and well combined. Remove from heat and stir in 1 teaspoon of vanilla extract.

In a large mixing bowl, combine 1 cup of whey protein powder, 1/4 cup of flaxseed meal, 2 tablespoons of chia seeds, 1/4 cup of hemp hearts, 1/4 cup of collagen peptides, 1/2 teaspoon of cinnamon, and 1/4 teaspoon of sea salt.

Pour the warm almond butter mixture into the dry ingredients and stir until thoroughly combined. The mixture should be thick and slightly sticky.

Fold in the toasted coconut, toasted almonds, and 1/4 cup of dark chocolate chips. If the mixture is too dry, add 1-2 tablespoons of water; if too wet, add a bit more protein powder.

Cover the bowl and refrigerate for 20 minutes to allow the mixture to firm up slightly, making it easier to handle.

Line a baking sheet with parchment paper. Using a tablespoon or a small cookie scoop, portion out the mixture and roll into balls approximately 1.5 inches in diameter. This recipe should make about 20 energy bites (5 per serving).
