Chef's Note

This parfait uses regular whole milk yogurt for a creamier texture and milder flavor than Greek yogurt. The toasted muesli provides a delightful crunch without being overly sweet. For the best experience, add the muesli just before serving to maintain its texture. All components can be prepared up to three days in advance and stored separately for quick assembly throughout the week.

Ingredients
  • 4 cups whole milk yogurt

  • 4 scoops vanilla protein powder

  • 3 tablespoons raw honey

  • 1 cup fresh strawberries, hulled and sliced

  • 1 cup fresh blueberries

  • 1 cup fresh raspberries

  • 1 cup blackberries

  • 2 cups homemade toasted muesli (see below)

  • 1 cup rolled oats

  • 1/4 cup sliced almonds

  • 1/4 cup chopped pecans

  • 1/4 cup sunflower seeds

  • 1/4 cup pumpkin seeds

  • 2 tablespoons chia seeds

  • 2 tablespoons coconut oil

  • 1 tablespoons maple syrup

  • 1 teaspoon cinnamon

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon salt

  • 1 teaspoon orange zest

Instructions
  • 1

Preheat oven to 325°F (165°C) for the toasted muesli.

  • 2

In a large bowl, combine 1 cup rolled oats, 1/4 cup sliced almonds, 1/4 cup chopped pecans, 1/4 cup sunflower seeds, 1/4 cup pumpkin seeds, and 2 tablespoons chia seeds.

  • 3

In a small saucepan over low heat, melt 2 tablespoons coconut oil. Remove from heat and stir in 1 tablespoon maple syrup, 1 teaspoon vanilla extract, 1 teaspoon cinnamon, and 1/4 teaspoon salt.

  • 4

Pour the liquid mixture over the dry ingredients and toss until evenly coated.

  • 5

Spread the muesli mixture on a parchment-lined baking sheet in an even layer.

  • 6

Bake for 10 minutes, then stir the muesli and bake for another 8-10 minutes until lightly golden. Be careful not to overbake.

  • 7

Remove from oven and let cool completely. The muesli will become crispier as it cools.

  • 8

While the muesli cools, wash all berries and slice the strawberries.

  • 9

In a medium bowl, gently mix 4 cups whole milk yogurt with 4 scoops of vanilla protein powder until smooth and well combined.

  • 10

Fold in 1 teaspoon of orange zest into the yogurt mixture.

  • 11

To assemble each parfait: In a serving glass or bowl, add 1/4 of the yogurt mixture, followed by a drizzle of honey (about 1/2 tablespoon per parfait), 1/4 of the mixed berries, and 1/4 cup of the toasted muesli.

  • 12

Repeat the layers once more, finishing with berries on top and a light drizzle of the remaining honey.

  • 13

Serve immediately or refrigerate for up to 2 hours before serving (add muesli just before serving if preparing in advance).
