4 scoops vanilla protein powder

1 cup rolled oats
1/2 cup sliced almonds
1/2 cup chopped walnuts
2 tablespoons chia seeds
2 tablespoons flaxseeds, ground
2 tablespoons coconut oil
1 teaspoon cinnamon
1 teaspoon vanilla extract
1/4 teaspoon salt
1 teaspoon lemon zest

Preheat oven to 325°F (165°C) for the homemade granola.

In a large bowl, mix 1 cup rolled oats, 1/2 cup sliced almonds, 1/2 cup chopped walnuts, 2 tablespoons chia seeds, and 2 tablespoons ground flaxseeds.

In a small saucepan over low heat, melt 2 tablespoons coconut oil. Remove from heat and stir in 1 tablespoon honey, 1 teaspoon vanilla extract, 1 teaspoon cinnamon, and 1/4 teaspoon salt.

Pour the liquid mixture over the dry ingredients and toss until evenly coated.

Spread the granola mixture on a parchment-lined baking sheet in an even layer.
