This fruit parfait is incredibly versatile - feel free to use any seasonal fruits you have on hand. For the best texture, make the granola ahead of time and store in an airtight container for up to two weeks. If you prefer a dairy-free option, substitute the Greek yogurt with coconut yogurt. The key to a perfect parfait is layering - this creates a beautiful presentation and ensures you get a bit of everything in each spoonful.

1/2 cup sliced almonds
1/4 cup unsweetened coconut flakes

1 teaspoon ground cinnamon

1/3 cup honey
3 tablespoons coconut oil
1 teaspoon vanilla extract
3 cups Greek yogurt
2 cups strawberries
1 cup blueberries
2 medium mangoes
3 medium kiwi fruits
1/4 cup fresh mint leaves
1/4 cup additional honey
2 tablespoons lemon juice

Preheat your oven to 325°F (165°C) and line a large baking sheet with parchment paper.

In a large bowl, combine 2 cups rolled oats, 1/2 cup sliced almonds, 1/4 cup coconut flakes, 2 tablespoons chia seeds, 1 teaspoon cinnamon, and 1/4 teaspoon salt.

In a small saucepan over low heat, warm 1/3 cup honey and 3 tablespoons coconut oil until melted and combined, about 2 minutes. Remove from heat and stir in 1 teaspoon vanilla extract.

Pour the honey mixture over the oat mixture and stir until everything is well coated.

Spread the granola mixture evenly on the prepared baking sheet and bake for 25-30 minutes, stirring every 10 minutes, until golden brown. Allow to cool completely (it will crisp up as it cools).

While the granola bakes, prepare the fruit. Hull and quarter 2 cups of strawberries. Rinse 1 cup of blueberries. Peel and dice 2 medium mangoes. Peel and slice 3 medium kiwi fruits.

In a small bowl, mix 2 tablespoons lemon juice with 2 tablespoons of the additional honey. Toss the prepared fruit in this mixture to prevent browning and add sweetness.

Chop 1/4 cup fresh mint leaves and set aside for garnish.

To assemble the parfaits, place about 1/3 cup Greek yogurt in the bottom of each serving glass or bowl.

Add a layer of the mixed fruit (about 1/3 cup) on top of the yogurt.

Sprinkle 2-3 tablespoons of the cooled granola over the fruit.

Repeat the layers once more: yogurt, fruit, and granola.
