2 cups fresh pineapple

Preheat the oven to 325°F (165°C).

In a mixing bowl, combine 1 cup rolled oats, 1/2 cup chopped walnuts, 1/4 cup flaxseed meal, 2 tablespoons chia seeds, 1/2 teaspoon cinnamon, and 1/8 teaspoon nutmeg.

Drizzle 1 tablespoon of melted coconut oil and 1 tablespoon of honey over the mixture and stir until evenly coated.

Spread the mixture on a parchment-lined baking sheet and bake for 20 minutes, stirring halfway through, until golden brown. Remove from oven and let cool completely (about 15 minutes).

While the granola is cooling, prepare the pineapple by cutting 2 cups into small cubes. Reserve a few pieces for garnish.

In a small saucepan, heat 1 cup of the pineapple chunks with 1 tablespoon of honey over medium heat for 10-12 minutes until slightly caramelized and softened.

Remove from heat and allow to cool for 5 minutes, then blend until smooth to create a pineapple sauce.

In a large bowl, whisk 2 cups of cottage cheese with 1 teaspoon vanilla extract and 1/4 cup vanilla protein powder until well combined.
