Chef's Note
For extra crispness, you can return the crackers to the turned-off oven with the door slightly open for an additional 15 minutes after baking. The crackers can be stored in an airtight container for up to two weeks, making this a great make-ahead snack option. For a savory variation, try adding herbs like dill or chives to the cottage cheese mixture.

Ingredients
2 cups cottage cheese
1 cup Greek yogurt
2 tablespoons honey
1 teaspoon vanilla extract
1 teaspoon lemon zest
1 cup fresh berries (mixed)
1 cup ground flaxseed
1/2 cup almond flour
1/4 cup chia seeds
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
3 tablespoons olive oil
1/2 cup water
1/2 teaspoon salt
1/2 teaspoon garlic powder
1 teaspoon dried rosemary
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
Instructions
- 1
Preheat your oven to 325°F (165°C) and line two baking sheets with parchment paper.
- 2
In a large mixing bowl, combine 1 cup of ground flaxseed, 1/2 cup of almond flour, 1/4 cup of chia seeds, 1/4 cup of sunflower seeds, and 1/4 cup of pumpkin seeds.
- 3
Add 1/2 teaspoon of salt, 1/2 teaspoon of garlic powder, 1 teaspoon of dried rosemary, 1/2 teaspoon of dried thyme, and 1/4 teaspoon of black pepper to the seed mixture and stir well.
- 4
Pour in 3 tablespoons of olive oil and 1/2 cup of water. Mix thoroughly until a thick, sticky dough forms. Let the mixture rest for 10 minutes to allow the chia and flax to absorb the liquid.
- 5
Divide the dough in half and place each portion between two sheets of parchment paper. Roll out each portion to about 1/8-inch thickness.
- 6
Remove the top parchment paper and use a knife or pizza cutter to score the dough into cracker-sized squares or rectangles.
- 7
Transfer the bottom parchment with the scored dough onto the prepared baking sheets.
- 8
Bake for 25-30 minutes, rotating the pans halfway through, until the crackers are golden brown and crisp.
- 9
Allow the crackers to cool completely on the baking sheets. They will continue to crisp as they cool. Break along the score lines once cooled.
- 10
While the crackers are baking, prepare the cottage cheese mixture. In a medium bowl, combine 2 cups of cottage cheese and 1 cup of Greek yogurt.
- 11
Add 2 tablespoons of honey, 1 teaspoon of vanilla extract, and 1 teaspoon of lemon zest to the cottage cheese mixture. Stir gently to combine.
- 12
Refrigerate the cottage cheese mixture until ready to serve.
- 13
To serve, divide the cottage cheese mixture into four portions. Top each portion with 1/4 cup of mixed berries and serve with the homemade flaxseed crackers.
