For the best texture, don't overcook the steel-cut oats—they should retain some chewiness. The compote can be made a day ahead and refrigerated, then gently reheated before serving. For extra fiber and nutrients, leave the apple skins on if using organic apples.

4 cups water

1/4 cup honey
4 medium apples (preferably Honeycrisp or Granny Smith)
1 tablespoon lemon juice
2 tablespoons brown sugar
1 teaspoon vanilla extract
2 cups mixed nuts (almonds, walnuts, pecans)
2 tablespoons unsalted butter
2 cups whole milk
1 cup Greek yogurt (full fat)
1/4 cup chia seeds
1/4 cup flaxseed meal

Toast 2 cups of mixed nuts in a dry skillet over medium heat for 5-7 minutes until fragrant and lightly browned, stirring frequently to prevent burning. Set aside to cool, then roughly chop.

For the apple compote: Peel, core, and dice 4 medium apples into 1/2-inch cubes. In a medium saucepan, melt 2 tablespoons of butter over medium heat.

Add the diced apples to the saucepan along with 2 tablespoons of brown sugar, 1 tablespoon of lemon juice, and 1 teaspoon of cinnamon. Stir to combine.

Cook the apple mixture for 8-10 minutes, stirring occasionally, until the apples are tender but still hold their shape. Remove from heat and stir in 1 teaspoon of vanilla extract. Set aside.

In a large pot, bring 4 cups of water and 1/2 teaspoon of salt to a boil. Add 2 cups of steel-cut oats and reduce heat to low.

Stir in 1 teaspoon of cinnamon, 1/2 teaspoon of nutmeg, 1/4 teaspoon of cardamom, and 1/8 teaspoon of cloves. Simmer for 10-12 minutes, stirring occasionally, until the oats are tender but still have some bite.

Remove the oatmeal from heat and stir in 1/4 cup of honey, 1/4 cup of chia seeds, and 1/4 cup of flaxseed meal. Let stand for 2 minutes to thicken.

Gently fold in 2 cups of whole milk and 1 cup of Greek yogurt into the oatmeal until well combined and creamy.

To serve, divide the oatmeal among 4 bowls. Top each serving with a generous portion of the apple compote and sprinkle with the toasted chopped nuts.
