Chef's Note

5 10-inch large flour tortillas

1 medium, sliced avocado
1/2 cup salsa

In a medium bowl, whisk together 8 eggs, 2 tablespoons milk, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until well combined.

Heat 1 tablespoon olive oil in a large non-stick skillet over medium heat. Add the diced red bell pepper and cook for 2-3 minutes until slightly softened.

Add the breakfast sausage to the skillet, breaking it up with a wooden spoon. Cook for about 5 minutes until browned and cooked through.

Add the sliced green onions to the skillet and cook for 1 minute.

Pour the egg mixture into the skillet with the sausage and vegetables. Cook, stirring occasionally, until eggs are just set but still moist, about 3-4 minutes.

To assemble each burrito, place a tortilla on a clean work surface. Spoon about 1/5 of the egg mixture in the center of the tortilla. Top with shredded cheese, chopped cilantro, avocado slices, and a spoonful of salsa.
