Chef's Note
For an elevated parfait experience, try using different varieties of honey such as lavender or orange blossom to complement the berries. 2.5 cups plain Greek yogurt
5 tablespoons honey
1 teaspoon vanilla extract
1 cup fresh strawberries, hulled and sliced
1 cup fresh blueberries
1 cup fresh raspberries
1.25 cups granola
1/2 cup sliced almonds, toasted
2 tablespoons chia seeds
1 teaspoon lemon zest
2 tablespoons fresh mint leaves, chopped

Toast 1/2 cup of sliced almonds in a dry skillet over medium heat for 5-7 minutes, stirring frequently until golden and fragrant. Set aside to cool.

In a medium bowl, combine 2.5 cups of Greek yogurt with 3 tablespoons of honey, 1 teaspoon of vanilla extract, and 1 teaspoon of lemon zest. Stir until well incorporated and smooth.

In a separate small bowl, toss the mixed berries (1 cup strawberries, 1 cup blueberries, and 1 cup raspberries) with 1 tablespoon of honey to lightly coat. Let sit for 5 minutes to macerate.

In another bowl, mix 1.25 cups of granola with 2 tablespoons of chia seeds and the remaining 1 tablespoon of honey. Stir to combine.

To assemble each parfait, place about 2 tablespoons of the granola mixture at the bottom of each serving glass or bowl.

Layer with 3 tablespoons of the honey-yogurt mixture.

Add a layer of mixed berries (about 3 tablespoons).
