For the best texture, make sure not to overcook the chicken. It should be just cooked through to keep it tender and juicy. You can prepare the vegetables and sauce ahead of time to make this an even quicker weeknight meal. For a more substantial dinner, serve with a side of brown rice or quinoa.

1 pound boneless, skinless chicken breasts
1 head butter lettuce
2 medium carrots
1 medium cucumber
4 stalks green onions
3 cloves garlic
1 tablespoon fresh ginger
3 tablespoons low-sodium soy sauce
1 tablespoon rice vinegar
2 teaspoons honey
2 teaspoons sesame oil
1 tablespoon olive oil
1 tablespoon sesame seeds
2 tablespoons hoisin sauce
1 teaspoon sriracha sauce (optional)

Wash and separate the butter lettuce leaves, then pat dry with paper towels. Set aside.

Peel and grate 2 medium carrots and 1 medium cucumber. Slice 4 green onions thinly. Place vegetables in separate bowls.

Mince 3 cloves of garlic and grate 1 tablespoon of fresh ginger.

Cut 1 pound of chicken breasts into small, bite-sized pieces.

In a small bowl, whisk together 3 tablespoons of low-sodium soy sauce, 1 tablespoon of rice vinegar, 2 teaspoons of honey, 2 teaspoons of sesame oil, and 2 tablespoons of hoisin sauce. Add 1 teaspoon of sriracha if desired for heat.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the minced garlic and grated ginger, cooking for 30 seconds until fragrant.

Add the chicken pieces to the skillet and cook for 6-8 minutes until golden brown and cooked through.

Pour the sauce mixture over the chicken and stir to coat evenly. Cook for another 2 minutes until the sauce thickens slightly.

Remove from heat and stir in half of the sliced green onions.

To serve, place the chicken mixture in a serving bowl and sprinkle with 1 tablespoon of sesame seeds and the remaining green onions.
