Chef's Note
For extra flavor, add a handful of fresh basil leaves torn over the pasta just before serving. The residual heat will release their aroma without wilting them too much. If you have leftover pasta, refrigerate it separately from the sauce to prevent it from becoming soggy.

Ingredients
12 oz spaghetti
3 tbsp olive oil
4 cloves garlic cloves
1/4 tsp crushed red pepper flakes
14 oz canned diced tomatoes
1 tsp dried oregano
1 tsp dried basil
1 tsp salt
1/2 tsp black pepper
1/2 cup grated Parmesan cheese
1 loaf baguette or Italian bread
4 tbsp butter
1 tsp garlic powder
1 tsp dried parsley
Instructions
- 1
Bring a large pot of salted water to a boil for the pasta.
- 2
While waiting for the water to boil, mince 3 garlic cloves and set aside.
- 3
Slice the baguette or Italian bread in half lengthwise. In a small bowl, mix 4 tbsp of softened butter with 1 tsp garlic powder and 1 tsp dried parsley. Spread this mixture evenly on both halves of the bread.
- 4
Preheat the oven to 375°F (190°C) for the garlic bread.
- 5
Once water is boiling, add 12 oz of spaghetti and cook according to package directions until al dente, usually 8-10 minutes.
- 6
While pasta cooks, heat 3 tbsp of olive oil in a large skillet over medium heat. Add the minced garlic and 1/4 tsp red pepper flakes, cooking for 1 minute until fragrant.
- 7
Add 14 oz of diced tomatoes, 1 tsp dried oregano, 1 tsp dried basil, 1 tsp salt, and 1/2 tsp black pepper to the skillet. Simmer for 10 minutes, stirring occasionally.
- 8
Place the prepared garlic bread in the oven and bake for 8-10 minutes until golden and crispy.
- 9
Drain the pasta when done, reserving 1/4 cup of pasta water.
- 10
Add the drained pasta to the sauce, tossing to coat. If the sauce is too thick, add a splash of the reserved pasta water.
- 11
Slice the garlic bread into portions.
- 12
Serve the pasta topped with grated Parmesan cheese alongside the garlic bread.
