Chef's Note
For the best flavor, choose apples that are in season and have a good balance of sweetness and tartness. The protein yogurt dip can be made ahead and stored in the refrigerator for up to 3 days, making this an easy grab-and-go snack option. For a more indulgent version, try drizzling a small amount of dark honey over the finished dish.

Ingredients
2 whole large apples (preferably Honeycrisp or Gala)
3 tablespoons natural almond butter
1 cup Greek yogurt (2% fat)
2 scoops vanilla protein powder
1 tablespoon honey
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 cup chopped walnuts
2 tablespoons hemp seeds
1 tablespoon lemon juice
1/8 teaspoon salt
Instructions
- 1
In a small bowl, mix 1 tablespoon of lemon juice with 1 cup of cold water. This will be used to prevent the apple slices from browning.
- 2
Wash and core 2 apples, then slice them into 1/4-inch thick wedges (about 8-10 slices per apple).
- 3
Place the apple slices in the lemon water for 2-3 minutes, then drain and pat dry with paper towels.
- 4
In a medium bowl, combine 1 cup of Greek yogurt with 2 scoops of vanilla protein powder, whisking until smooth and no lumps remain.
- 5
Add 1 tablespoon of honey, 1/2 teaspoon of cinnamon, and 1/8 teaspoon of salt to the yogurt mixture. Stir until well incorporated.
- 6
Toast 1/4 cup of chopped walnuts in a dry pan over medium heat for 3-4 minutes until fragrant, stirring frequently to prevent burning. Set aside to cool.
- 7
Arrange the apple slices on two serving plates.
- 8
Warm 3 tablespoons of almond butter in the microwave for 15-20 seconds to make it more spreadable.
- 9
Drizzle or spread the almond butter over the apple slices.
- 10
Sprinkle the apple slices with the remaining 1/2 teaspoon of cinnamon and 1/4 teaspoon of nutmeg.
- 11
Top the apple slices with the toasted walnuts and 2 tablespoons of hemp seeds.
- 12
Serve the protein yogurt dip alongside the apple slices for dipping.
