Chef's Note
For the crispiest apple chips, slice them as uniformly thin as possible. A mandoline is ideal, but a sharp knife works too if you're careful. The type of apple matters - Honeycrisp, Gala, and Pink Lady varieties work best as they have a good balance of sweetness and firmness. If your chips aren't crispy enough after cooling, you can return them to a warm (175°F) oven for 10-15 minutes to dry them further.

1 tablespoon fresh lemon juice
1 tablespoon pure maple syrup

Preheat your oven to 225°F (107°C) and line two large baking sheets with parchment paper or silicone baking mats.

Wash and dry the apples thoroughly. Using a mandoline slicer set to 1/8-inch thickness, carefully slice the apples into thin rounds. Remove any seeds or tough core pieces.

In a small bowl, mix together the cinnamon, coconut sugar, nutmeg, and sea salt until well combined.

Place the apple slices in a large bowl and drizzle with lemon juice and maple syrup. Toss gently to coat all slices evenly, which will prevent browning and add flavor.

Sprinkle the cinnamon-sugar mixture over the apple slices and toss again to ensure even coating on both sides of each slice.

Arrange the apple slices in a single layer on the prepared baking sheets, making sure they don't overlap.

Bake for 45 minutes, then flip each slice carefully with tongs or a spatula.

Return to the oven and bake for an additional 30-45 minutes, checking frequently after the 30-minute mark to prevent burning. The chips are done when they feel dry to the touch and the edges start to curl up.
