Chef's Note
For meal prep, keep the chickpeas, tzatziki, and vegetable mixture separate and assemble just before eating to prevent the wrap from getting soggy. You can also substitute the lavash with whole wheat pita or tortillas if preferred.

1 can (15 oz), drained and rinsed canned chickpeas
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 large sheets whole wheat lavash bread
1/2 cup Greek yogurt
1 tablespoon lemon juice
1 tablespoon, chopped fresh dill
1 medium, diced cucumber
1 cup, halved cherry tomatoes
1/4 cup, thinly sliced red onion
1/4 cup, crumbled feta cheese
1/4 cup, pitted and sliced kalamata olives
2 cups baby spinach

Preheat air fryer to 380°F (195°C).

In a medium bowl, combine drained chickpeas with 1 tablespoon olive oil, ground cumin, smoked paprika, garlic powder, salt, and black pepper. Toss until chickpeas are evenly coated.

Spread the seasoned chickpeas in the air fryer basket in a single layer and cook for 10 minutes, shaking halfway through, until crispy on the outside but still tender inside.

While chickpeas are cooking, prepare the tzatziki sauce by mixing 1/2 cup Greek yogurt with 1 tablespoon lemon juice and 1 tablespoon chopped fresh dill in a small bowl. Season with a pinch of salt and pepper.

In another bowl, toss together the diced cucumber, halved cherry tomatoes, sliced red onion, crumbled feta cheese, and sliced kalamata olives with the remaining 1 tablespoon olive oil. Season with a pinch of salt and pepper.

Warm the lavash bread slightly by placing it in the air fryer for about 30 seconds after the chickpeas are done.

To assemble each wrap, spread half of the tzatziki sauce on each lavash bread. Top with 1 cup baby spinach, half of the vegetable-feta mixture, and half of the crispy chickpeas.

Fold in the sides of the lavash bread and roll up tightly to form a wrap. Cut in half diagonally and serve immediately.
