Chef's Note

For the most tender steak, slice it very thinly against the grain and don't overcook it. You can prep all the vegetables ahead of time to make this even quicker on busy nights. Feel free to substitute any seasonal vegetables you have on hand. For extra flavor, toast the sesame seeds in a dry pan before sprinkling them on top.

Ingredients
  • 1.5 pounds flank steak

  • 1/4 cup soy sauce

  • 3 tablespoons sesame oil

  • 2 tablespoons brown sugar

  • 2 tablespoons rice vinegar

  • 2 tablespoons, minced fresh ginger

  • 4 cloves, minced garlic

  • 1 head, cut into florets broccoli

  • 1 large, sliced red bell pepper

  • 2 medium, julienned carrots

  • 1 cup snow peas

  • 8 ounces, sliced shiitake mushrooms

  • 4 sliced green onions

  • 2 tablespoons sesame seeds

  • 1 tablespoon cornstarch

  • 2 tablespoons vegetable oil

  • 1/2 teaspoon (optional) red pepper flakes

Instructions
  • 1

In a bowl, whisk together 3 tablespoons soy sauce, 2 tablespoons sesame oil, 2 tablespoons brown sugar, 1 tablespoon rice vinegar, 1 tablespoon minced ginger, and 2 minced garlic cloves to create a marinade.

  • 2

Slice the flank steak against the grain into thin strips. Place in a shallow dish and pour the marinade over it, ensuring all pieces are coated. Cover and refrigerate for at least 10 minutes while preparing other ingredients.

  • 3

In a small bowl, combine the remaining 1 tablespoon soy sauce, 1 tablespoon rice vinegar, 1 tablespoon sesame oil, 1 tablespoon minced ginger, 2 minced garlic cloves, and 1 tablespoon cornstarch. Whisk until smooth to create the stir-fry sauce.

  • 4

Heat 1 tablespoon vegetable oil in a large wok or skillet over high heat. When the oil is shimmering, add the marinated steak in a single layer (you may need to do this in batches). Cook for 2-3 minutes, turning once, until browned but still slightly pink inside. Transfer to a plate.

  • 5

In the same wok, add the remaining 1 tablespoon vegetable oil. Add broccoli and carrots first, stir-frying for 3 minutes.

  • 6

Add the bell peppers, snow peas, and shiitake mushrooms. Stir-fry for another 3-4 minutes until vegetables are crisp-tender.

  • 7

Return the steak to the wok. Pour the stir-fry sauce over everything and toss to coat. Cook for 1-2 minutes until the sauce thickens and everything is well-coated.

  • 8

Sprinkle with sliced green onions and sesame seeds. Add red pepper flakes if desired for heat.

  • 9

Remove from heat and let rest for 2 minutes before serving.

  • 10

Serve hot over steamed rice or noodles of your choice.
