2 cups plain Greek yogurt (2% fat)
2 tablespoons raw honey
1/4 cup walnuts
1 cup fresh berries (mixed strawberries and blueberries)
1/2 cup rolled oats
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
1/2 teaspoon lemon zest
1 tablespoon chia seeds

Toast 1/4 cup walnuts in a dry skillet over medium heat for about 5 minutes, stirring frequently until fragrant. Remove from heat and let cool before roughly chopping.

In a small bowl, combine 1/2 cup rolled oats with 1/2 teaspoon cinnamon and toast in the same skillet over medium heat for 3-4 minutes until lightly golden. Set aside to cool.

Wash 1 cup of mixed berries and slice any larger strawberries into bite-sized pieces.

In a medium bowl, mix 2 cups Greek yogurt with 1/2 teaspoon vanilla extract, 1/2 teaspoon lemon zest, and 1 tablespoon of the honey until well combined.

To assemble each parfait, place 1/4 of the yogurt mixture in the bottom of each serving glass.

Layer with 1/4 of the toasted oat mixture, followed by 1/4 of the berries.

Repeat with another layer of yogurt, oats, and berries.

Top each parfait with half of the chopped toasted walnuts, a sprinkle of chia seeds, and drizzle the remaining honey (about 1/2 tablespoon per parfait) over the top.
