4 ounces high-quality white chocolate
1 tablespoon unsalted butter
2 tablespoons heavy cream
1/2 teaspoon sea salt flakes

2 tablespoons freeze-dried raspberry powder

Wash strawberries thoroughly and pat completely dry with paper towels. Any moisture will prevent the chocolate from adhering properly. Leave stems intact for easier dipping.

Line a large baking sheet with parchment paper. Ensure strawberries are at room temperature for best results.

Create a double boiler by placing a heat-proof bowl over a pot of simmering water (ensure the bowl doesn't touch the water). Add the dark chocolate and 1 tablespoon of butter to the bowl.

Stir the chocolate mixture gently until completely melted and smooth. Remove from heat and stir in 1 tablespoon of heavy cream to create a glossy ganache.

Hold each strawberry by the stem and dip into the chocolate, rotating to coat about 3/4 of the berry. Allow excess chocolate to drip back into the bowl.

For the white chocolate drizzle, create another double boiler and melt the white chocolate with 1 tablespoon of heavy cream until smooth.
