1 pound large shrimp
3 tablespoons olive oil
3 cloves garlic
1 whole lemon
1 teaspoon dried oregano

15 ounces canned white beans
1 cup cherry tomatoes
1 medium cucumber
1/4 cup red onion
1/3 cup kalamata olives
1/2 cup feta cheese
1/4 cup fresh parsley
1/2 teaspoon salt
1/4 teaspoon black pepper

Peel and devein 1 pound of shrimp if not already prepared. Pat dry with paper towels.

Mince 3 cloves of garlic and zest 1 lemon, then juice half of it (reserve the other half for serving).

In a medium bowl, combine 1 tablespoon olive oil, minced garlic, lemon zest, 1 teaspoon dried oregano, 1/4 teaspoon red pepper flakes, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.

Add the shrimp to the marinade and toss to coat. Let sit for 5 minutes while preparing other ingredients.

Drain and rinse 15 ounces of white beans. Set aside.

Halve 1 cup of cherry tomatoes, dice 1 medium cucumber, finely dice 1/4 cup red onion, and roughly chop 1/3 cup kalamata olives.

Chop 1/4 cup fresh parsley and crumble 1/2 cup feta cheese.

Heat a large skillet over medium-high heat. Add 1 tablespoon olive oil.

Cook the marinated shrimp for 2-3 minutes per side until pink and opaque. Remove from heat.

In a large bowl, combine white beans, tomatoes, cucumber, red onion, olives, and parsley.

Make the dressing by whisking together 1 tablespoon olive oil and the juice from half a lemon.

Add the cooked shrimp to the salad and drizzle with the dressing. Toss gently to combine.
