Chef's Note
For the puffiest Dutch baby, make sure all ingredients are at room temperature before mixing. The key to success is preheating the skillet properly - it should be very hot when you add the batter. If you don't have a cast iron skillet, any oven-safe skillet will work, though cast iron gives the best rise and crispy edges.

3/4 cup milk
3 large eggs
1 teaspoon vanilla extract
1/4 teaspoon salt
1 teaspoon ground cinnamon
4 tablespoons unsalted butter
2 medium Granny Smith apples
3 tablespoons brown sugar
1/4 teaspoon ground nutmeg
1 teaspoon lemon juice
2 tablespoons powdered sugar
1/4 cup maple syrup

Place a 10-inch cast iron skillet in the oven and preheat to 425°F (220°C).

In a blender, combine the flour, milk, eggs, vanilla extract, salt, and 1/2 teaspoon of cinnamon. Blend on medium-high speed for 30 seconds, scrape down the sides, and blend for another 30 seconds until smooth. Let the batter rest for 10 minutes.

Meanwhile, peel, core, and thinly slice the apples. Toss them in a bowl with the lemon juice, brown sugar, remaining 1/2 teaspoon cinnamon, and nutmeg.

Carefully remove the hot skillet from the oven. Add 2 tablespoons of butter and swirl to coat the bottom and sides of the pan.

Pour the batter into the hot buttered skillet and immediately return it to the oven. Bake for 15 minutes until the edges are puffed and golden brown.

While the pancake is baking, melt the remaining 2 tablespoons of butter in a medium saucepan over medium heat. Add the apple mixture and cook for 5-7 minutes, stirring occasionally, until the apples are tender but still have some bite.

When the Dutch baby is done, remove it from the oven (it will deflate as it cools, which is normal).

Spoon the warm cinnamon apples into the center of the pancake, dust with powdered sugar, and serve immediately with maple syrup on the side.
