Chef's Note
For the best flavor, use very ripe bananas with brown spots. If the mixture seems too wet after resting, add a bit more oat flour. You can also roll these energy bites in additional oats before baking for extra texture. These are perfect for pre-workout fuel or a quick breakfast on the go!

4 large ripe bananas
3 cups rolled oats
1/2 cup sunflower butter
1/3 cup maple syrup
1/4 cup coconut oil
2 teaspoons vanilla extract
2 teaspoons ground cinnamon

1/2 cup dried cranberries
1/4 cup coconut flour
1 cup oat flour

Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large bowl, mash 4 large ripe bananas with a fork until smooth.

Add 1/2 cup sunflower butter, 1/3 cup maple syrup, 1/4 cup melted coconut oil, and 2 teaspoons vanilla extract to the mashed bananas. Mix until well combined.

In a separate bowl, combine 3 cups rolled oats, 1 cup oat flour, 1/4 cup coconut flour, 2 teaspoons ground cinnamon, 1/2 teaspoon ground ginger, and 1/4 teaspoon salt.

Gradually add the dry ingredients to the banana mixture, stirring until everything is well incorporated.

Fold in 1/2 cup dried cranberries.

Let the mixture rest for 10 minutes to allow the oats to absorb some moisture.

Using a tablespoon or cookie scoop, portion the mixture into approximately 32 equal balls (4 per serving).
