1/4 teaspoon salt
2 cups milk (dairy or plant-based)
1 cup Greek yogurt

1 teaspoon vanilla extract
2 medium apples (preferably Honeycrisp or Gala)
1 tablespoon lemon juice
3/4 cup pecans
1 tablespoon unsalted butter
1 tablespoon brown sugar

In a large mixing bowl, combine 2 cups of old-fashioned rolled oats, 2 tablespoons of chia seeds, 2 teaspoons of ground cinnamon, 1/4 teaspoon of ground nutmeg, and 1/4 teaspoon of salt. Mix well to distribute the spices evenly.

Add 2 cups of milk, 1 cup of Greek yogurt, 3 tablespoons of maple syrup, and 1 teaspoon of vanilla extract to the oat mixture. Stir until thoroughly combined.

Core and dice 1 apple into small cubes (about 1/4 inch). Toss the diced apple with 1 tablespoon of lemon juice to prevent browning.

Fold the diced apple into the oat mixture, reserving some for topping if desired.

Divide the mixture evenly among 4 mason jars or airtight containers. Cover and refrigerate overnight or for at least 6 hours.

The next morning, core and dice the remaining apple into small cubes.

In a skillet over medium heat, melt 1 tablespoon of butter. Add 3/4 cup of pecans and toast for about 3-4 minutes until fragrant, stirring frequently to prevent burning.

Add 1 tablespoon of brown sugar to the pecans and stir until the sugar melts and coats the nuts, about 1-2 minutes. Remove from heat and let cool completely.
