Chef's Note
For the best flavor absorption, use day-old brioche bread as it will soak up more of the custard mixture without falling apart. If you only have fresh bread, the 5-minute drying step is crucial. For a more intense maple flavor, try using Grade B maple syrup, which has a stronger taste than Grade A.

Ingredients
8 slices thick-cut brioche bread
4 whole large eggs
1 cup whole milk
2 teaspoons pure vanilla extract
2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/4 cup pure maple syrup
3 tablespoons unsalted butter
1 cup fresh strawberries, sliced
1 cup fresh blueberries
1 cup fresh raspberries
2 tablespoons powdered sugar
1/2 cup maple syrup (for serving)
Instructions
- 1
In a large, shallow bowl, whisk together 4 eggs, 1 cup milk, 2 teaspoons vanilla extract, 2 teaspoons ground cinnamon, 1/4 teaspoon nutmeg, 1/4 teaspoon salt, and 1/4 cup maple syrup until well combined.
- 2
Place the brioche slices in a single layer on a baking sheet. Allow the bread to dry out slightly for about 5 minutes, flipping once halfway through.
- 3
Preheat a large non-stick skillet or griddle over medium heat. Add 1 tablespoon of butter and allow it to melt.
- 4
Dip each slice of brioche into the egg mixture, allowing it to soak for about 20 seconds per side. Let excess mixture drip off before transferring to the hot skillet.
- 5
Cook 2-3 slices at a time (depending on your pan size) for 3-4 minutes per side until golden brown and cooked through. Add 1 tablespoon of butter to the pan between batches.
- 6
While cooking the French toast, gently toss together 1 cup sliced strawberries, 1 cup blueberries, and 1 cup raspberries in a bowl.
- 7
Transfer the cooked French toast to serving plates. Dust with powdered sugar, top with fresh berry mixture, and serve with warm maple syrup on the side.
