This salad can be made ahead and stored in the refrigerator for up to 2 days, though I recommend adding the dressing just before serving for optimal freshness. For added protein, you could include some grilled chicken or tofu.

6 oz rice noodles
1 medium red bell pepper
1 large carrot
1/2 medium cucumber
3 stalks green onions
1/4 cup cilantro
2 tbsp mint leaves
1/4 cup roasted peanuts
1/2 cup edamame
3 tbsp natural peanut butter
2 tbsp low-sodium soy sauce
1 tbsp rice vinegar
1 tbsp lime juice
2 tsp honey
1 tsp sesame oil
1 clove garlic
1 tsp ginger
1/4 tsp red pepper flakes

Bring a medium pot of water to a boil. Cook 6 oz of rice noodles according to package directions (usually 6-8 minutes). Drain and rinse under cold water to stop the cooking process.

While the noodles cook, julienne 1 medium red bell pepper and 1 large carrot into thin matchsticks.

Slice 1/2 medium cucumber into half-moons or thin strips.

Thinly slice 3 stalks of green onions on a diagonal.

Roughly chop 1/4 cup of cilantro and 2 tbsp of mint leaves.

Coarsely chop 1/4 cup of roasted peanuts, reserving some for garnish.

Cook 1/2 cup of edamame according to package directions, then shell them if necessary.

For the dressing, mince 1 clove of garlic and grate 1 tsp of fresh ginger.

In a small bowl, whisk together 3 tbsp natural peanut butter, 2 tbsp low-sodium soy sauce, 1 tbsp rice vinegar, 1 tbsp lime juice, 2 tsp honey, 1 tsp sesame oil, the minced garlic, grated ginger, and 1/4 tsp red pepper flakes.

Add 1-2 tbsp of warm water to the dressing if needed to achieve a pourable consistency.

In a large bowl, combine the cooled noodles, prepared vegetables, herbs, and edamame.
