2 cups Greek yogurt (full-fat)
1/4 cup raw almonds
1/4 cup raw walnuts
1/4 cup raw pistachios (shelled)
3 tablespoons honey (preferably raw)
1 cup fresh berries (strawberries, blueberries, raspberries)
1/2 cup granola
1/2 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1 teaspoon lemon zest
4 leaves fresh mint leaves

Preheat your oven to 325°F (165°C).

Roughly chop 1/4 cup almonds and 1/4 cup walnuts. Leave 1/4 cup pistachios whole.

Spread all nuts on a baking sheet in a single layer and toast in the preheated oven for 8-10 minutes, stirring halfway through, until golden and fragrant. Watch carefully to prevent burning.

While nuts are toasting, wash and prepare 1 cup of fresh berries. Hull and slice strawberries if using.

In a small bowl, mix 2 cups Greek yogurt with 1/2 teaspoon vanilla extract, 1/4 teaspoon ground cinnamon, and 1 teaspoon lemon zest.

Once nuts are toasted, remove from oven and let cool for 5 minutes.

To assemble each parfait: In a clear glass, layer 1/4 of the yogurt mixture, followed by 1/8 cup granola, a few berries, and a sprinkle of toasted nuts.
