In a medium bowl, combine the Greek yogurt, honey, ground cinnamon, vanilla extract, lemon zest, and a pinch of salt. Whisk until smooth and well incorporated.

Cover the yogurt mixture and refrigerate for at least 30 minutes to allow the flavors to meld together.

While the dip is chilling, wash and dry the apples thoroughly.

Core the apples and slice them into even wedges, about 8-10 slices per apple.

Place the apple slices in a large bowl and toss gently with lemon juice to prevent browning.
