For the best flavor, use the freshest herbs you can find. If fresh herbs aren't available, you can substitute with dried herbs at a ratio of 1:3 (1 tablespoon fresh = 1 teaspoon dried). For a more substantial meal, serve with a side of whole grain toast or a simple arugula salad dressed with lemon and olive oil.

1/3 cup feta cheese
1/2 cup cherry tomatoes
1 cup baby spinach
1/2 medium red bell pepper
1/4 medium red onion
1 tablespoon fresh oregano
1 tablespoon fresh basil
1 tablespoon fresh parsley
8 pitted and halved kalamata olives
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper

Preheat oven to 375°F (190°C).

Dice 1/2 red bell pepper and 1/4 red onion. Halve the cherry tomatoes and roughly chop the fresh herbs.

In a 10-inch oven-safe skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced red onion and sauté for 3 minutes until softened.

Add the diced red bell pepper and cook for another 2 minutes until slightly softened.

Add 1 cup of baby spinach and cook until just wilted, about 1 minute.

In a medium bowl, whisk together 6 eggs, 2 tablespoons of milk, 1/4 teaspoon salt, and 1/4 teaspoon black pepper until well combined.

Stir the chopped fresh herbs (1 tablespoon each of oregano, basil, and parsley) into the egg mixture.

Pour the egg mixture over the vegetables in the skillet. Sprinkle 1/3 cup of crumbled feta cheese, 1/2 cup of halved cherry tomatoes, and 8 halved kalamata olives evenly over the top.

Cook on the stovetop for 3-4 minutes until the edges begin to set.

Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the frittata is set in the center and lightly golden on top.

Remove from the oven (careful, the handle will be hot!) and let cool for 2 minutes before slicing into wedges and serving.
