Chef's Note

This strata is perfect for busy mornings as you can prepare it the night before and simply bake it in the morning. For extra flavor, try adding fresh herbs like basil or chives just before serving. The Gruyère can be substituted with any good melting cheese like cheddar or fontina if preferred.

Ingredients
  • 4 slices whole grain bread

  • 1 medium red bell pepper

  • 1/2 medium yellow bell pepper

  • 2 cups baby spinach

  • 3 stalks green onions

  • 6 large eggs

  • 3/4 cup milk

  • 1 cup Gruyère cheese

  • 1/2 teaspoon dried thyme

  • 1/4 teaspoon garlic powder

  • 1 teaspoon Dijon mustard

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 tablespoon olive oil

Instructions
  • 1

Grease an 8x8-inch baking dish with a little olive oil and set aside.

  • 2

Cut the bread slices into 1-inch cubes and place in a large bowl.

  • 3

Dice 1 medium red bell pepper and 1/2 medium yellow bell pepper into small pieces.

  • 4

Thinly slice 3 green onions, separating the white and green parts.

  • 5

Heat 1 tablespoon olive oil in a skillet over medium heat. Add the bell peppers and white parts of green onions, sautéing until softened, about 5 minutes.

  • 6

Add 2 cups baby spinach to the skillet and cook until just wilted, about 1 minute. Remove from heat and let cool slightly.

  • 7

In a medium bowl, whisk together 6 large eggs, 3/4 cup milk, 1 teaspoon Dijon mustard, 1/2 teaspoon dried thyme, 1/4 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.

  • 8

Layer half the bread cubes in the prepared baking dish, followed by half the vegetable mixture and 1/2 cup of Gruyère cheese.

  • 9

Repeat with remaining bread, vegetables, and another 1/2 cup of cheese.

  • 10

Pour the egg mixture evenly over the layers, gently pressing down to ensure all bread is soaked.

  • 11

Cover with plastic wrap and refrigerate for at least 30 minutes or overnight.

  • 12

When ready to bake, preheat oven to 350°F (175°C).

  • 13

Bake uncovered for 30 minutes, or until the strata is puffed, golden brown, and set in the center.

  • 14

Sprinkle with the reserved green onion tops and let rest for 5 minutes before serving.

This was quite tasty, but I would use sourdough next time. I would also bake the bread after chopping it.
