Chef's Note
For the best flavor, make sure to use fresh herbs rather than dried. If cooking for picky eaters, you can omit the red pepper flakes. The fish can also be baked at 400°F for 10-12 minutes if you don't have access to a grill.

5 6-oz fillets tilapia fillets
3 tablespoons fresh lemon juice
4 tablespoons olive oil
2 tablespoons fresh parsley
1 tablespoon fresh thyme
3 cloves garlic
1 tablespoon lemon zest
2 pounds broccoli florets
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes
1 lemon lemon wedges

Preheat oven to 425°F and heat grill or grill pan to medium-high heat.

In a small bowl, mix 3 tablespoons of olive oil with 3 tablespoons of lemon juice, 2 tablespoons of chopped parsley, 1 tablespoon of chopped thyme, 3 minced garlic cloves, and 1 tablespoon of lemon zest.

Pat the 5 tilapia fillets dry with paper towels and place them in a shallow dish. Pour half of the herb mixture over the fish, turning to coat both sides. Season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Let marinate for 10 minutes.

Meanwhile, toss 2 pounds of broccoli florets with 1 tablespoon of olive oil, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/4 teaspoon of red pepper flakes on a baking sheet.

Place the baking sheet with broccoli in the preheated oven and roast for 15 minutes, stirring halfway through, until broccoli is tender and slightly charred.

While broccoli is roasting, grill the tilapia fillets for 3-4 minutes per side, until fish flakes easily with a fork and reaches an internal temperature of 145°F.

Serve the grilled tilapia with the roasted broccoli, drizzle the remaining herb mixture over the fish, and garnish with lemon wedges.
