1 whole large flour tortilla
2 large eggs
1 cup fresh spinach
2 tablespoons feta cheese
4 whole cherry tomatoes
2 tablespoons red onion
1 teaspoon olive oil
1 teaspoon fresh dill
1/2 teaspoon za'atar seasoning
1/4 teaspoon salt
1/8 teaspoon black pepper
1 tablespoon Greek yogurt

Finely dice 2 tablespoons of red onion and quarter 4 cherry tomatoes. Chop 1 cup of fresh spinach and finely chop 1 teaspoon of fresh dill.

In a small bowl, whisk 2 large eggs with 1/4 teaspoon salt, 1/8 teaspoon black pepper, and 1/2 teaspoon za'atar seasoning.

Heat 1 teaspoon olive oil in a non-stick skillet over medium heat. Add the diced red onion and sauté for 1 minute until slightly softened.

Add the chopped spinach to the skillet and cook for 1-2 minutes until wilted.

Pour the egg mixture into the skillet with the vegetables and cook for 2-3 minutes, gently stirring to create soft scrambled eggs.

While the eggs are cooking, warm the flour tortilla in the microwave for 10 seconds or in another dry pan.

Spread 1 tablespoon of Greek yogurt on the warm tortilla.

Place the scrambled egg mixture in the center of the tortilla, top with 2 tablespoons crumbled feta cheese, quartered cherry tomatoes, and sprinkle with fresh dill.

Fold the sides of the tortilla in, then roll from the bottom up to form a wrap. Cut in half diagonally if desired.
