Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.

In a small saucepan, melt 1 tablespoon of coconut oil over low heat. Once melted, remove from heat and stir in 1 tablespoon of maple syrup, 1/2 teaspoon of cinnamon, 1/4 teaspoon of sea salt, and 1/2 teaspoon of vanilla extract.

In a medium bowl, combine 1/4 cup of raw almonds, 1/4 cup of raw walnuts, 1/4 cup of raw cashews, and 2 tablespoons of raw pumpkin seeds.

Pour the coconut oil mixture over the nuts and seeds, tossing well to ensure even coating.

Spread the coated nuts and seeds in a single layer on the prepared baking sheet.

Bake for 15-20 minutes, stirring halfway through, until the nuts are lightly toasted and fragrant. Watch carefully to prevent burning.

While the nuts are cooling, chop 1/4 cup of dried apricots into small pieces.

In a large bowl, combine the cooled toasted nuts and seeds with 1/4 cup of dried cranberries, the chopped dried apricots, and 2 tablespoons of dried blueberries.
