Chef's Note
For an extra flavor dimension, try infusing the honey with a sprig of rosemary or lavender before drizzling. Simply warm the honey with the herb for 5 minutes, then remove the herb before using. Also, this parfait can be assembled in advance and stored in the refrigerator for up to 24 hours—just add the granola right before serving to maintain its crunch.

2 cups Greek yogurt (2% fat)
2 tablespoons honey
1 teaspoon vanilla extract
1 cup fresh strawberries, hulled and sliced
1/2 cup fresh blueberries
1/2 cup fresh raspberries
1/2 cup granola
1/4 cup sliced almonds
2 tablespoons chia seeds
1 teaspoon lemon zest
6 leaves fresh mint leaves

In a small bowl, mix 2 cups of Greek yogurt with 1 teaspoon of vanilla extract and 1 teaspoon of lemon zest until well combined.

In a separate small bowl, gently toss the 1 cup of sliced strawberries, 1/2 cup of blueberries, and 1/2 cup of raspberries together.

Toast 1/4 cup of sliced almonds in a dry skillet over medium heat for about 3-4 minutes, stirring frequently until golden and fragrant. Set aside to cool.

In a small saucepan, warm 2 tablespoons of honey over low heat for about 1 minute until it becomes more fluid and easier to drizzle.

In a small, dry skillet, toast 1/2 cup of granola over medium-low heat for about 3-4 minutes, stirring occasionally until fragrant and slightly more golden. Allow to cool.

To assemble each parfait, start with 1/4 cup of the yogurt mixture at the bottom of each serving glass.

Add a layer of mixed berries (about 1/4 cup) on top of the yogurt.
