The ground turkey in this panini is seasoned with Mediterranean herbs to create a flavorful patty that pairs beautifully with the melted cheese and vegetables. For the best results, cook the turkey until just done - overcooking can make it dry. If you prefer a spicier sandwich, add a pinch of red pepper flakes to the turkey mixture before cooking. This recipe works great with leftover cooked turkey as well - simply reheat it with the seasonings before assembling the sandwich.

4 oz ground turkey
1 large ciabatta roll
1 clove garlic
1/2 tsp dried oregano
1/4 tsp fennel seeds
1/4 tsp salt
1/8 tsp black pepper
2 slices provolone cheese
1/4 cup roasted red peppers
1/2 cup baby spinach
4 leaves basil leaves
2 tsp olive oil
1 tsp balsamic glaze
1 medium apple
3/4 cup Greek yogurt

In a small bowl, mix ground turkey with minced garlic, dried oregano, fennel seeds, salt, and black pepper.

Heat 1 tsp olive oil in a small skillet over medium heat. Add the seasoned ground turkey and cook for about 5 minutes, breaking it into small crumbles, until fully cooked. Set aside.

Slice the ciabatta roll in half horizontally.

Layer the cooked turkey crumbles on the bottom half of the roll.

Place 2 slices of provolone cheese on top of the turkey.

Add 1/4 cup of roasted red peppers, 1/2 cup of baby spinach, and 4 basil leaves on top of the cheese.

Drizzle 1 tsp of balsamic glaze over the vegetables.

Close the sandwich with the top half of the roll.

Heat a panini press or skillet over medium heat.
