Chef's Note
For the best flavor, look for authentic Italian prosciutto cotto (cooked ham) at your deli counter. If you don't have a panini press, you can use a regular skillet and press the sandwich down with a heavy pot or pan. The Greek yogurt and apple make this a complete meal with balanced macros.

1 whole ciabatta roll
4 oz Italian ham (prosciutto cotto)
2 slices provolone cheese
1/4 cup roasted red peppers
1/2 cup baby spinach
1 tbsp basil pesto (without olive oil)
1 tsp butter
1 medium apple
3/4 cup Greek yogurt
Instructions

Slice the ciabatta roll in half horizontally.

Spread 1 tbsp of basil pesto on the bottom half of the roll.

Layer 4 oz of Italian ham on top of the pesto.

Add 2 slices of provolone cheese on top of the ham.

Top with 1/4 cup of roasted red peppers and 1/2 cup of baby spinach.

Place the top half of the roll over the fillings.

Heat a panini press or skillet over medium heat.

Lightly spread 1 tsp of butter on the outside of the sandwich.

Grill the sandwich for 3-4 minutes per side until the bread is golden and the cheese is melted.

Slice the panini in half diagonally and serve with 1 medium apple and 3/4 cup of Greek yogurt on the side.
