This protein-packed snack mix stores well in an airtight container for up to 3 days. For variety, you can substitute different nuts or seeds based on what you have on hand. Just be careful not to overbake - you want the cheese to slightly soften but not completely melt.

1/4 cup low-fat mozzarella cheese
1/4 cup reduced-fat cheddar cheese
2 tablespoons almonds
1 tablespoon walnuts
1 tablespoon pumpkin seeds
8 crackers whole grain crackers
1 tablespoon dried cranberries
2 tablespoons dried apple pieces
1/4 teaspoon garlic powder
1/8 teaspoon dried rosemary
1/8 teaspoon black pepper

Preheat oven to 350°F (175°C) and line a small baking sheet with parchment paper.

Cut 1/4 cup of low-fat mozzarella and 1/4 cup of reduced-fat cheddar cheese into small cubes and place in a medium bowl.

Add 2 tablespoons of almonds, 1 tablespoon of walnuts, and 1 tablespoon of pumpkin seeds to the bowl.

Break 8 whole grain crackers into bite-sized pieces and add to the mixture.

Add 1 tablespoon of dried cranberries and 2 tablespoons of dried apple pieces to the bowl.
