For the best flavor, make sure not to burn the nuts - they can go from perfectly roasted to burnt quickly. The protein powder adds a significant protein boost without changing the flavor much. You can customize this mix with your favorite nuts, just keep the total amount the same.

1/4 cup mixed nuts (almonds, walnuts, pecans)
1/4 cup peanuts
2 tablespoons whey protein powder (unflavored)
1 tablespoon honey
1 teaspoon olive oil
1/4 teaspoon cinnamon
1/8 teaspoon salt

Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.

In a medium bowl, combine 1/4 cup mixed nuts and 1/4 cup peanuts.

In a small bowl, mix 1 tablespoon honey and 1 teaspoon olive oil until well combined.

Pour the honey mixture over the nuts and stir until all nuts are evenly coated.

Sprinkle 1/4 teaspoon cinnamon and 1/8 teaspoon salt over the nuts and mix well.

Spread the nuts in a single layer on the prepared baking sheet.

Bake for 12-15 minutes, stirring once halfway through, until the nuts are golden brown.
