Chef's Note

For meal prep, you can cook the turkey mixture ahead of time and store it in the refrigerator. When ready to eat, just reheat the turkey and assemble your wrap for a fresh, quick lunch. Using lean ground turkey (93% lean) helps keep the fat content in check while providing plenty of protein.

Ingredients
  • 8 oz lean ground turkey

  • 1 tsp Italian seasoning

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/4 tsp salt

  • 1/4 tsp black pepper

  • 1 tsp olive oil

  • 2 each large whole wheat tortilla

  • 1/4 cup low-fat mozzarella cheese, shredded

  • 1 cup spinach leaves

  • 1/2 cup diced tomatoes

  • 1/4 cup red bell pepper, diced

  • 1/4 cup low-sodium marinara sauce

Instructions
  • 1

Heat 1 tsp of olive oil in a non-stick skillet over medium heat.

  • 2

Add 8 oz of lean ground turkey to the skillet and break it up with a wooden spoon.

  • 3

Season the turkey with 1 tsp of Italian seasoning, 1/2 tsp of garlic powder, 1/2 tsp of onion powder, 1/4 tsp of salt, and 1/4 tsp of black pepper. Cook for about 8-10 minutes until the turkey is fully cooked and no longer pink.

  • 4

Add 1/4 cup of low-sodium marinara sauce to the cooked turkey and stir to combine. Cook for an additional 2 minutes until heated through.

  • 5

Warm 2 large whole wheat tortillas in the microwave for 15-20 seconds to make them more pliable.

  • 6

Lay the tortillas flat and divide the turkey mixture between them, placing it in the center of each tortilla.

  • 7

Top each with 2 tablespoons of shredded low-fat mozzarella cheese, 1/2 cup of spinach leaves, 1/4 cup of diced tomatoes, and 2 tablespoons of diced red bell pepper.

  • 8

Fold in the sides of the tortillas, then roll them up tightly to form wraps.

  • 9

If desired, return the wraps to the skillet and cook for 1-2 minutes per side until lightly toasted and sealed.

  • 10

Cut each wrap in half diagonally before serving.
