For the best flavor, make sure to stir the nut mix halfway through baking to prevent burning. The protein powder is added after baking while the mix is still warm to help it stick without denaturing the protein. You can customize this mix with your favorite nuts, just keep the total amount the same.

2 tablespoons whey protein powder (unflavored)
1 tablespoon honey
1 teaspoon olive oil
1/4 teaspoon cinnamon
1/8 teaspoon salt
2 tablespoons dried cranberries

Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.

In a medium bowl, mix 1/4 cup mixed nuts, 1/4 cup rolled oats, and 2 tablespoons dried cranberries.

In a small bowl, whisk together 1 tablespoon honey, 1 teaspoon olive oil, 1/4 teaspoon cinnamon, and 1/8 teaspoon salt until well combined.

Pour the honey mixture over the nut mixture and stir until everything is evenly coated.

Spread the mixture in a single layer on the prepared baking sheet.

Bake for 12-15 minutes, stirring halfway through, until the nuts are golden brown and fragrant.
