Chef's Note
You can make a larger batch of these turkey meatballs and freeze them for future wraps. Just thaw and reheat when needed for an even quicker snack. For extra flavor without adding calories, try adding a dash of red pepper flakes to the meatball mixture.

Ingredients
4 oz ground turkey
1 large whole wheat tortilla
1 large egg white
2 tbsp breadcrumbs
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp dried oregano
1/8 tsp salt
1/8 tsp black pepper
2 tbsp tomato sauce
1/2 cup baby spinach
2 tbsp reduced-fat shredded mozzarella
Instructions
- 1
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- 2
In a bowl, combine 4 oz ground turkey, 1 large egg white, 2 tbsp breadcrumbs, 1/4 tsp onion powder, 1/4 tsp garlic powder, 1/4 tsp dried oregano, 1/8 tsp salt, and 1/8 tsp black pepper. Mix until just combined, being careful not to overmix.
- 3
Form the mixture into 6 small meatballs, about 1-inch in diameter, and place them on the prepared baking sheet.
- 4
Bake the meatballs for 12-15 minutes, or until they reach an internal temperature of 165°F (74°C).
- 5
While the meatballs are baking, warm 1 large whole wheat tortilla in a dry skillet over medium heat for about 30 seconds on each side.
- 6
Spread 2 tbsp tomato sauce on the warmed tortilla and top with 1/2 cup baby spinach.
- 7
Once the meatballs are done, place them on the tortilla, sprinkle with 2 tbsp reduced-fat shredded mozzarella.
- 8
Roll up the tortilla tightly, tucking in the sides as you go, to form a wrap. Cut in half diagonally if desired and serve immediately.
