Chef's Note
For extra flavor without adding complexity, try warming your tortillas for 10 seconds in the microwave before assembling - this makes them more pliable and less likely to crack when folding. You can also substitute any cheese you have on hand, just make sure it's a good melting variety.

2 each large flour tortillas
6 oz deli ham, thinly sliced
1 cup shredded cheddar cheese
1/2 cup shredded monterey jack cheese
2 each green onions
1 tbsp butter
1/4 cup salsa
2 tbsp sour cream
Instructions

Thinly slice 2 green onions and set aside.

Lay 1 large flour tortilla on a clean work surface.

Sprinkle 3/4 cup of shredded cheddar cheese and 1/4 cup of monterey jack cheese evenly over the entire tortilla.

Arrange 6 oz of thinly sliced ham evenly over half of the tortilla.

Sprinkle the sliced green onions over the ham.

Sprinkle the remaining 1/4 cup cheddar cheese and 1/4 cup monterey jack cheese over the ham and green onions.

Fold the tortilla in half to create a half-moon shape.

Heat a large skillet over medium heat and add 1 tbsp of butter.

Once butter is melted, carefully place the quesadilla in the skillet and cook for 3-4 minutes until golden brown on the bottom.

Carefully flip the quesadilla and cook for another 3-4 minutes until the second side is golden brown and the cheese is completely melted.

Remove from heat and let rest for 1 minute before cutting into 4 triangular pieces.

Serve with 1/4 cup salsa and 2 tbsp sour cream on the side.
