Chef's Note
For extra flavor without adding complexity, you can lightly toast the tortillas in a dry pan for 30 seconds on each side before assembling the quesadilla. This creates a more sturdy base and enhances the flavor. If you're in a hurry, you can microwave the assembled quesadilla for 30 seconds before pan-frying to ensure the cheese melts completely.

2 each large flour tortillas
6 oz deli ham, thinly sliced
1 cup shredded cheddar cheese
1/2 cup shredded monterey jack cheese
2 each green onions
1/4 cup red bell pepper
1 tbsp butter
2 tbsp sour cream
2 tbsp salsa
Instructions

Thinly slice the green onions and dice the red bell pepper into small pieces.

Lay one tortilla flat on a cutting board. Evenly distribute 6 oz of ham slices over half of the tortilla.

Sprinkle 1 cup of shredded cheddar cheese and 1/2 cup of monterey jack cheese over the ham.

Add the sliced green onions and diced red bell pepper on top of the cheese.

Fold the empty half of the tortilla over the filled half to create a half-moon shape.

Heat a large skillet over medium heat and add 1 tbsp of butter.

Once the butter is melted, carefully place the quesadilla in the skillet.

Cook for about 3-4 minutes until the bottom is golden brown, then carefully flip and cook for another 3-4 minutes until the other side is golden and the cheese is fully melted.

Remove from heat and let cool for 1 minute before cutting into triangles.

Serve with 2 tbsp of sour cream and 2 tbsp of salsa on the side.
